Cowboy Waffles

If we lived in Sweden, March 25th would be Waffle Day, but since we don’t, I’ll go with the next best thing…every Sunday in our house is Waffle Day.  We mix it up occasionally, but 99% of Sundays that we are home, it’s Waffle Day.  And that means Cowboy Waffles.  I’m not sure how or why Capone started calling them this, but Nana just asked me for this recipe and since Capone was big enough to sit on the counter, he’s been helping me make these on Sunday mornings.

They are based on Mark Bittman’s Everyday Buttermilk Waffles but we throw in cinnamon, apples, nuts, and raisins and this apparently makes them Cowboy Waffles.  Some weeks we make the full recipe, and some weeks we make half.  The smaller batch is the perfect amount for the 3 of us.  The larger batch freezes well and we heat them up the toaster. Corn Dog Bites

Hot dogs and corn dogs are the epitome of foods we try and avoid having in the house.  They are highly processed, full of sodium, and most about as far from local, ethical, and organic as you can get.  That said, Capone is nearly 3 and despite being very open to much healthier foods, hot dogs and corn dogs are things he loves and asks for on occasion.  So as a compromise, I made him corn dog bites last weekend.

They were toddler sized, contained minimal hotdog, not fried, and as unprocessed as you can make a corn dog.  (more…)

Green Noodles

It’s St. Patrick’s Day and at least according to my Pintrest feed that means I should be adding green food coloring to everything I make.  We try really, really hard to avoid artificial coloring, as it tends to turn Capone into a different and not so easy to live with kid, but for St. Patrick’s Day, I pulled out one of his all-time favorite dishes:  Green Noodles.  I originally called this something like Pasta Salad with Spinach Pesto, but he has renamed it for good.

This recipe came about early last spring when we starting getting loads of spinach from our CSA.  I like spinach, but I could only sneak it in so many dishes for Capone and we were hoping to find a way to save some of our veggies for the very long winter break from fresh, organic, local produce.  I made a batch of spinach pesto with the item I had on hand (no special ingredients here, but you could definitely substitute), threw it in ice cube trays, froze and forgot about it.  Fast forward to a week that I was really busy and we didn’t even have time to make it to the grocery store and “Green Noodles” were born.  I was shocked the first time Capone gobbled it up (including the added veggies) and it’s been a go-to meal for us on busy nights all year long.
